Base
1/2 C butter, softened
1/3 C granulated sugar
1 C all purpose flour
1/3 C raspberry or apricot jam
Filling
1(250g) pkg light cream cheese
1/4 C sugar
1 egg
1 tsp vanilla
Topping
3 C cooking apples peeled and thinly sliced
1/3 C sugar
1/2 tsp cinnamon
1/2 C to 1 C sliced almonds
Cream butter and sugar together. Blend in flour. Press evenly onto bottom and make a little wall around about 1 1/2 or 3.5 cm spring form pan. Spread jam evenly over crust.
Beat cheese, sugar, egg and vanilla together until smooth. Spread over jam.
Toss apple, sugar and cinnamon together to coat well. Spoon over filling. Sprinkle with almonds.
Bake in the middle of oven at 450 degrees F for 10 minutes, reduce heat to 400 degrees F for 25 – 30 minutes or until set and apples are tender. Cool slightly then remove from pan. Serve warm or cool. Do not freeze.
