Mussels

Two methods

Wine

Water in pot large enough to hold mussels adequately
1/2 cup white wine
1 large onion minced coarsely
1 green pepper minced coarselyminced coarsely
2 celery stalks sliced finely
salt and pepper to taste
Combine all ingredients and boil for approximattely 20 minutes

 

Arrabatia

2 cans 28 fl oz or 796 ml of diced tomatos in pot large enough to hold mussels adequately
1 or 2 hot peppers(your choice to taste) minced finely
1 large onion minced coarsely
1 green pepper minced coarsely
1 celery stalk sliced finely
salt and pepper to taste
Combine all ingredients and boil for approximattely 30 minutes

 

Add fresh live mussels
boil with lid on the pot for 5 to 10 minutes. Ensure the mussels are covered and do not peek to often. Mussels are done when the shells are open. Throw out any that do not open.

 

Preparation of mussels – soak in water bath for 1/2 to 2 hours, this gets the sand out of them.
