Sugar Cookie Cups

and variations from a Pampered Chef Party

 

For all recipes below first prepare the Betty Crocker Sugar Cookies according to the directions on the back of the package. Ie. Add mix to ½ cup butter, & 1 egg, stir until blended.

 

Then choose your cookie from the choices below

 

1. Caramilk Cookie Cups: Scoop and Press dough with Tart shaper and add a piece of Caramilk chocolate bar to each and pinch closed. Serve right out of the oven for best taste!

 

2. Raspberry Almond Cookies: Add 1/2 cup chopped almonds and 1 tsp. Almond extract to dough, mix. Scoop and Press dough into mini muffin pan with small scoop and tart shaper. Fill cups with Presidents Choice seedless Raspberry Jam. Before serving, sprinkle with icing sugar using the Flour Sugar Shaker.

 

3. Hazelnut Chocolate Truffle Cookies: Add 1/2 cup chopped Hazelnuts to batter, mix. Scoop and press cups. Bake. Press again and let cool. Loosen from the cups and prepare filling. Filling: 1/2 cup whipping cream, heated for 1 min. add 1 cup choc chips, 1tsp vanilla, 1 Tbls butter, mix until smooth. Add to cooked cups.

 

4. Turtle Cookies: Scoop and press plain cookie dough, Bake. Press again to form indent and let cool. Loosen from the cups and prepare
Filling: Heat in saucepan, 1 cup butter, 1 cup brown sugar, 1 Tbsp corn syrup, 1 cup sweetened condensed milk. Stir constantly bring to a boil. Cook a few more minutes stirring constantly until thickened. Stir for 1 more minute as it cools. Once shells are cooked, add the caramel filling, sprinkle with toasted pecans and drizzle with melted chocolate.
Cooks Tip: To drizzle chocolate, you can cut a small hole in the bottom of a Ziploc bag and secure with a twixit clip

 

My Notes:1. A homemade sugar cookie recipe can be used, The demonstration was to show how easy and quick the cups could be made.
2. The sugar cookie cups are made in the miniature muffin pans, which are normally quantity 24 versus normal size of 12 per pan.
